The strong flavor of mustard greens requires balance so it is not overpowering. Walnut oil, dates, vinegar and bulgur compliment the flavor of mustard greens. You can substitute dates with dried cranberries.

Ingredients:

Bulgur, 1 cup

Mustard greens, 1 bunch, tough stems removed and sliced

White wine vinegar, 4 teaspoons

Walnut oil, 6 teaspoons

Water, 2-3 tablespoons

Shallots, 2, chopped

Salt, ½ teaspoon

Dates, 1/3 cup, pitted and chopped

Walnuts, 2 tablespoons, chopped

Garlic, 1 tablespoon, chopped
